Christmas Spread

 

 

Here's the cracker spread you had at Audrey's.  I got this reciepe from my grandmother.  We had a family member who owned at restaurant in Essex, Ma and they served this while their customers waited for their orders.  My grandmother called it her Christmas Spread, I don't know why.

 

 

2 med green peppers

1/2 C sweet gerkin pickles

1/2 C stuffed olives                    put these ingredients through a meat grinder,

1 sm onion                                drain liquid (leave ingredients moist)

1 sm clove garlic

 

2 pkgs. cream cheese - soften

        or

1 container sm curd cottage cheese

1 tblsp. cream or milk

1/2 C mayonnaise

1/2 C ketchup

sm amount of salt & pepper

1 tblsp. horseradish

pinch dry mustard

dash paprika

dash Worcestershire Sauce

 

After you have ground the above ingredients, put aside.  Place cream cheese in a bowl, add cream and work with a fork to soften and break apart.  Add the first five ingredients and blend well. Add the remaining ingredients and with a fork blend so the cheese is mixed well throughout.  If you prefer the cottage cheese makes it much easier and that is what I use.  This receipe makes a large amount.
